Hjalmar Gislason and his company GRID posted a pretty good article on how to characterize the differences between Excel and Google Sheets in terms of demographics.
I think Excel chugs along in the short to medium term but Sheets ultimately wins out. This is because
1. Sheets is better for collaboration
2. It's available free to all users with a Google account
3. Sheets is catching up to Excel in terms of feature parity - helped along by numerous plugins such as SheetWhiz, which is dedicated to bringing Excel functionality to Google Sheets
